  • Team No Waste

    Today’s breakfast/lunch (truly brunch without the boozy drinks) combo I whipped up in my small but mighty kitchen here in Antibes inspired this post. I used leftover bread from last night’s dinner as the base; layered in leftover sauteed Brussels sprouts, a few slices of mozzarella cheese, and frozen spinach; and topped with four eggs scrambled with about a half cup of water and voila — I have brunchy goodness that’ll be easily re-heated for the next several days and not an ounce of waste in sight.

    That’s got to be one of the best habits I’ve picked up living here in the South of France: just how little food I’m throwing away on a regular basis. Back in the States, it’s pretty normal for us to hit the grocery store about every week to 10 days, spend $100+ with the best of intentions of cooking a ton of meals at home, and then inevitable, every two weeks or so… I’m cleaning out the refrigerator and throwing a solid chunk of that $100 into a trash bag.

    Here in Antibes, the refrigerator in my apartment is the size of most dorm room units, and I’m also only cooking for one. I also have the better part of six+ grocery stores and markets within walking distance and a farmers market two blocks from home that’s open every day from 6:00 a.m. until 1 p.m. So I’m buying fresh items, every two or three days, and making the most of them. I’ve thrown away so little while I’m here and hope this is a habit I can stick with when I return home in May. The only complication is that it might mean more occasional trips to the grocery store, which is not nearly convenient at home as it has been here.

    Speaking of the grocery shopping aspect: I do a pretty solid job of utilizing both Lowes Foods and Harris Teeter’s online ordering services, though… so I think I can easily maximize the return on the $4.99 convenience fee charged AND save the time of having to actually shop in the store, too. I’v also been stalking the inventory of RelayFoods.com and am constantly drooling over their selection, so I see a lot more of that in my future, too. I think the saved cost of not throwing away so much of our inventory week after week will well make up for any additional costs in my convenience shopping ways.

    I received a new email yesterday: “5 New Bisquick Desserts”. YUM. There’s no option to view the entire email as webpage, or I’d link this to all of them, so I’ll just pick the one that’s going to get tested in my next Betty Crocker moment.

    Citrus Mini Cheesecakes

    Need nibbles for a crowd? Cheesecake bars stir together in minutes and satisfy palates with a citrus twist.

    Prep Time:15 min

    Start to Finish:1 hr 55 min

    Makes:60 mini cheesecakes

    Crust
    1 1/2 cups Original Bisquick® mix
    1/2 cup sugar
    1 teaspoon grated lime, lemon or orange peel
    1/3 cup firm butter or margarine
    Filling
    3 packages (8 oz each) cream cheese, softened
    1 1/2 cups sugar
    2 tablespoons Original Bisquick® mix
    1 teaspoon grated lime, lemon or orange peel
    1 1/4 cups milk
    3 tablespoons lime, lemon or orange juice
    1 teaspoon vanilla
    3 eggs
    Citrus peel, if desired

    Directions
    1. Heat oven to 375°F. In medium bowl, stir crust ingredients except butter. With pastry blender (or pulling 2 table knives through ingredients in opposite directions), cut in butter until mixture looks like coarse crumbs. Pat on bottom of ungreased 15x10x1-inch pan. Bake 10 minutes.

    2. Meanwhile, in large bowl, beat cream cheese, 1 1/2 cups sugar, 2 tablespoons Bisquick mix and 1 teaspoon lime peel with electric mixer on medium speed until blended and fluffy. On low speed, beat in milk, lime juice, vanilla and eggs until blended. Beat on low speed 2 minutes longer. Pour over partially baked crust.3. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool completely, about 1 hour. Refrigerate until ready to serve. For mini cheesecakes, cut into 10 rows by 6 rows. Garnish with citrus peel. Store covered in refrigerator.

    Adrianne and I were talking about our love of smoothies last night and how we couldn’t figure out why Planet Smoothie’s new franchisee didn’t wait until the slow of summer to close the Hillsborough Street location instead of before exams… maybe they need a business consulting team… one comprised of the Jeffries/Fields girls? 😉

    So this post is dedicated to smoothies in Raleighwood!

    An update on our Planet Smoothie stores, which closed because a new franchisee was taking them over: The store at 6325 Falls of Neuse Road in Raleigh already reopened. The store at 2302 Hillsborough St. in Raleigh will reopen May 23, and the store at 966 High House Road in Cary will reopen in mid-June.From Sue’s “Taking Stock” blog:On May 7 (that’s Wednesday), Planet Smoothie will launch a new program to promote the health benefits of drinking smoothies. All summer, every Wednesday, Planet Smoothie stores will offer a smoothie from each of its “lifestyle categories” for 99 cents. Here’s the schedule:

    *May 7: Leapin’ Lizard (peaches, strawberries and fat burner blast from the Weight Loss lifestyle category)

    *June 4: Spazz (strawberries, bananas and booster blast from the Energy lifestyle category)

    *July 2: Chocolate Chimp (chocolate, bananas & protein blast from the Protein lifestyle category)

    *August 6: Twig & Berries (strawberries, bananas, & yogurt from the Cool Blended lifestyle category)

    *September 3: Screamsicle (pineapple, peaches, orange juice, sherbet & anti-oxidant blast from the Wellness lifestyle category

    And, as I wrote in this week’s Retailing column, our area Planet Smoothie stores are in the process of reopening under new ownership. The one on Falls of Neuse Road in Raleigh is already open. The store on Hillsborough Road in Raleigh will open on May 23. And the Cary store will open in mid-June.

  • March Madness is Coming!

    Ok, so it’s not here yet… but things sure are heating up on Tobacco Road!

    After doing some fun event research for a postcard at work, I decided that I want to have a March Madness party this year. Either at the townhouse or at Buckhead. I mean, this is NC people… if you can’t enjoy ACC basketball then you have no business being in close proximity to NCSU, UNC, Duke, and Wake Forest all at once.

    I think I’ll make this drink I found on eVite’s March Madness party ideas:

    “Beer and sports are a perfect match, so have a fridge full of brew. But if you want to shoot long for a 3-pointer, try this cocktail with three different rums (one for each point).

    3-Point Basket (Zombie)

    • 1 shot dark rum
    • 1 shot white rum
